The market, mapped
Three tiers serve the private table. The household cook-housekeeper, ฿25,000 to 35,000 monthly, keeps a family fed well in Thai and simple Western registers, and is the workhorse of most staffed homes. The dedicated private chef, ฿50,000 to 120,000 monthly, brings restaurant technique home: menu planning, provisioning networks, dinner-party execution, dietary architecture for the household. And the event tier: restaurant chefs and independent brigades who cook privately by the evening, from ฿3,000 to 8,000 per head for serious multi-course work, more when a name is attached. The tiers mix: many families run a cook daily and bring the event tier in monthly.
Hiring a private chef, properly
- The talent pool draws from hotel brigades and the fine-dining scene; hotel-trained candidates bring consistency and hygiene discipline, restaurant-trained ones bring flair. Know which you are hiring.
- Trial extensively: a two-week paid trial cooking your family's actual week, not an audition dinner, reveals everything an interview cannot.
- Provisioning is half the role: the best chefs carry supplier relationships, per our provisions briefing, and their market network is worth as much as their knife work.
- Structure the role in writing: days, covers, entertaining expectations, provisioning budget authority and its accounting. Ambiguity here is where good hires sour.
- Foreign chefs need work permits like any employee; the practical route for most households is Thai talent, which at this tier needs no apology whatsoever.
The villa dinner, done at standard
Phuket's villa-dining scene is a genuine strength: established private-chef outfits and freelance brigades deliver everything from Thai feast tables to tasting menus with wine service, staffed with service teams, at prices that embarrass the equivalent evening in Europe. The craft is in the booking: the good brigades calendar out weeks ahead in high season, menus deserve a real consultation rather than a package pick, and the household's kitchen should be walked by the chef beforehand. For the marquee evening, a named Bangkok chef will travel; that conversation runs through relationships, which is what our office is for.
Catering at event scale
- The five-star hotels cater externally and remain the safe standard for formal scale: impeccable, insured, and priced accordingly.
- The independent premium caterers between hotel and restaurant tiers offer better food per baht with more character; references and a tasting are the diligence.
- Halal, kosher-style and allergy-serious briefs are handled well at the top of the market but must be stated at first contact, not final headcount, per our Gulf-families briefing for the halal specifics.
- Licensing touches private events lightly, but villa estates have rules about vendors, noise and hours; clear them before contracts, per our private-events briefing.
One honest calibration: the gap between a ฿1,500-per-head buffet and a ฿5,000-per-head brigade dinner is not 3x the food; it is the difference between catering and cooking. At the tables our partners host, the second is the only tier worth the evening.
Building the table
The families who eat best here run it as a quiet system: a capable daily cook, a provisioning routine built on the city's real suppliers, an event brigade on speed dial, and one person, a house manager or our office, who owns the standard. Assembled once, it runs for years, and the dinner invitation to your table becomes, as it should be, a small event in other people's calendars.
